Healing Broths: Extracting Culinary and Medicinal Goodness from Bones, Herbs and Vegetables

What is old is new again: modern research has confirmed that broth helps prevent and mitigate certain diseases. These nourishing liquids are also some of the most flavorful and versatile staples you can have in the kitchen. In this demonstration class you will learn about the history of vegetable and various bone broths, techniques for maximum flavor and nutrient extraction, and the almost infinite uses of broths in your cooking.
The workshop will conclude with a broth and “add-in” condiment tasting.
This workshop is offered on a sliding scale of $10-$40 per person. Attendance is free for active Ceres volunteers.

About the Chef:
Chef John Littlewood has been working in kitchens for over 30 years. Educated at the California Culinary Academy, John has worked in Michelin-starred restaurants in France, luxury hotels in the Caribbean, on sailboats and in private homes, and has also taught cooking in the California Gold Country. Chef John’s work has been featured in Bon Appétit and Cooking Light magazines. His first book, Celebrating the Seasons at Westerbeke Ranch, was published in 2006.
